From Fort Collins to Estes Park, the mix of food, drink, and lifestyle concepts reflects the area’s growing diversity and appetite for creativity, each new opening bringing its own unique flavor.

For longtime residents, these openings are a welcome sign that NoCo continues to evolve while staying true to its community-focused roots. For newcomers, they provide even more reasons to explore and connect with the area’s vibrant culture. Whether you’re hunting for your next favorite lunch spot, a new nightlife option, or an innovative hangout, something exciting is waiting to be discovered. Here’s a roundup of the latest restaurants and businesses making waves across Northern Colorado.

Taste at Night at Taste Local

Where? 330 Cleveland Ave, Loveland

Launched in June, Taste at Night is the evening evolution of the much-loved Taste Local Café on Cleveland Avenue. While the café is known for its fresh, locally sourced breakfasts and lunches, this new concept offers a more refined and intimate atmosphere after dark. Taste at Night is open Thursday through Saturday from 5 to 10 p.m. Guests can expect handcrafted cocktails and mocktails, along with a rotating menu of small plates that are perfect for sharing. With its warm, inviting design and focus on fresh ingredients, Taste at Night aims to strike the perfect balance between elevated dining and approachable comfort, making it an ideal spot for date nights, special occasions, or unwinding after a busy day.

Beyond food and drink, the addition of Taste at Night enriches Loveland’s growing downtown nightlife scene. By offering a unique space that’s both sophisticated and laid-back, it fills a gap between casual pubs and high-end restaurants. The café’s commitment to sourcing local products remains central, giving every drink and dish a Colorado touch. Whether you’re sipping a seasonal cocktail on the patio or enjoying a flight of mocktails with friends, Taste at Night offers Loveland locals a fresh way to experience a familiar favorite reimagined for evenings.

Where? 120 E 4th Ave, Loveland

Loveland’s nightlife just got a twist with the arrival of The Love Shack, a completely alcohol-free bar and entertainment space taking over the former Bar Lyssa on Fourth Street – Loveland’s sweet spot for a fresh, sober night out. The Love Shack sets out to offer all the fun of a nightspot – live music, food, games, and community – without the booze. Located at a prime downtown corner near where The Hobnob once served locals, it’s poised to be a standout venue for those looking to hang with friends in a lively, inclusive atmosphere.

Inside, expect a diverse lineup of non-alcoholic fun. Crafted mocktails, elixir-style “potions,” NA spirits, wines, and beers headline the drink menu, blending creativity and social comfort in one spot. The Love Shack will also feature a coffee house with light food and snacks and evening entertainment – such as trivia nights, live performances, dancing, and casual game nights – all designed to appeal to a wider audience, which includes sober-curious patrons, families, and community groups. In their basement, you can find coin-operated games such as pool tables, dartboards, pinball, and arcade games. They also offer a rentable game room for small groups to play Dungeons and Dragons or similar types of games. It’s a fresh approach to nightlife in Northern Colorado – a place to let loose, connect, and have fun – without the alcohol.

Northern Colorado’s favorite breakfast-and-lunch chain, The Breakfast Club, has officially expanded with a brand-new Greeley location at the former site of El Charro. The breakfast bar adds a nostalgic diner vibe that invites friendly interaction, while the signature menu – pancakes, omelets, Benedicts, and more – offers the same high-quality, made-to-order favorites fans love across Fort Collins and Loveland. Sure to be a new local favorite, the Breakfast Club in Greeley delivers comfort food, charm, and community warmth under one roof.
